Learn to make muffins as the pros do — or just let Uncle Wally's do the work for you — like these chocolate-chocolate chip beauties
I was looking through a cookbook on baking the other day, searching for ideas for:
dessert for that night, or issues and ideas related to muffins to blog about.
There were cakes, cupcakes, tortes, cookies, quick breads, even candies. No muffins.
Hmmmm. I began to check other baking books in my collection.
Few or no muffins.
I wondered, “Do bakers scorn muffins? Are muffins seen as a boring, workaday drudgery? Are muffins just something tradition suggests have to be in the display case, or in the supermarket chiller, or on display in your coffee shop? Or are they something a professional baker doesn’t find very interesting?”
I think one reason muffins get so little respect, besides the fact that they’re everywhere, is that they’re so easy they’re hard to make.
An axiom of the cooking world is that the fewer and more basic the ingredients, the more skill it takes to get the recipe just right. The cook has nothing to hide behind — no frosting or sprinkles or filling or glaze.
If you’ve ever tried to make muffins at home, you’ll understand. Muffin recipes look so easy. But how many times have you come out with a muffin tin full of flat, uneven, heavy, homely-looking muffins fit only for the dog’s dinner?
I’ve certainly done that.
Here’s what professional bakers like those at Uncle Wally’s know:
Always preheat the oven.
Spray the muffin tin with nonstick spray (even if the tin is nonstick).
As soon as the leavening agent hits the liquid ingredient, the clock is running.
Muffin ingredients must be carefully measured; stick to the recipe. You can’t just throw in an extra half-banana because you’ve got one left over.
Don’t over-mix. Some recipes call for combining dry ingredients and quickly adding wet ingredients. Others go the other direction: those using butter begin more like a cake, creaming butter and sugar, adding eggs, then adding mixed dried ingredients. In either case, the flavoring ingredients such as fruit, dried fruit or nuts go in last. Make sure bananas are well mashed. All is done economically, with the lightest of touches.
Never overfill a muffin cup; and always fill it evenly. The cup should be filled no more than three-quarters full, leaving about 1/2 inch at the top.
Use a ladle, deep spoon or measuring cup; just make sure to scoop up the same amount all the time.
Assure that the batter will slide right out of the ladle or spoon by spraying it with nonstick spray.
Bake on center rack.
Do not over bake; most muffins seem to like a temperature around 375 but we’ve seen them at 350 all the way up to 400. Higher temperatures encourage a quick rise at the beginning so you get the puffed dome on top.
Professional bakeries such as Uncle Wally’s have all this down, so that their muffins are always beautifully domed, light and of even measure. You can see why: The pros have developed and understand the techniques for making this simple.
Remember, some things that look simple are not! That’s why we’d all rather have someone else be our muffin makers!
